Water varies from place to place. Tap water, spring water, filtered water, and bottled water all contain varying amounts of minerals, chemicals, and even some preservatives. This causes your coffee to taste inconsistent, and more importantly, it can cause the buildup of limescale in your machinery.
Because Third Wave Water mineral profiles do not contain those particular minerals, we have ensured that our minerals will not boil out of your water and adhere to your machine's boiler or anywhere it isn't supposed to.
That is what makes our Classic and Espresso Profiles different from each other. You may have noticed that the minerals are different in each of those profiles. Our Espresso Profile was designed with higher temperatures and pressures in mind so that you don't need to worry as much about harming your expensive machine with scale buildup!
Our Classic Profile contains sodium chloride, which is why we do not recommend using it in your espresso machine; at higher pressures and temperatures, that may cause some slight issues with your boiler and potentially lead to a substance buildup. However, at the lower pressures found in other coffee makers (Mr. Coffee, Keurig, etc.) and for boiling your water in a kettle, this will not be an issue.
